A new post again , with simple recipe ,amazing flavors and wonderful sabji option for vegetarian people - Onion /Pyaaz ka Bharta / Smoked Onion Sabji.
This goes really well with Roti or even rice. I personally prefer it with roti but you are avoiding wheat then eat with rice too.
Typical bharta means Baingan i.e. Eggplant for all,but sometimes it is good to make something different. Specially, when you have people whom you are going to feed and they are very choosy about what they eat.So instead of putting all the hours in kitchen and finally if food is wiped off the plates then that makes up for all the work.
I thought of making Onion bharta , so I used regular medium sized yellow onions. You can use the red/white onions too.Even shallots/sambhar onions will work fine.
The best smoky flavor is achieved by marinating the onions,and after that roast directly on flame or use griddle. Even roasting in oven will work fine.
The best part of this dish is it has very basic ingredients for which you do not need to break your piggy bank or change your diet. Another interesting part is that many people avoid including onions in their diet as the raw and sometimes cooked onion too leaves an aftertaste,but in this recipe because you roast the onions so they get a nice sweet flavor.
Mondays are usually gloomy for me,as after the weekend ,no one is in a mood to get up from bed and start working. Plus making a menu for a vegetarian day is another tension as I have to make sure that I cook something that is eaten by all and but still my kids defeat me in this area.
This bharta was enjoyed by us elders,and was over in no time. Do try this recipe even for breakfast and you wont be regretting. Tastes wonderful with HOT phulkas. Pyaaz Ka Barta / Onion Bharta Recipe

Delicious Smoked Onion Sabji!
INGREDIENTS:
- 4 Medium Onions, peeled and cut into cubes(Try to separate,each petal of each cube)
- 1/2 Teaspoon Black pepper Powder
- Salt as per taste
- 1 & 1/2 Tablespoon Chili Garlic Sauce
- 1 Teaspoon Soy Sauce
- 1 Medium Tomato,chopped finely
- 3/4th Teaspoon Sugar
- a Fistful Grated Coconut
- 2 small Green Chilies ,chopped finely
- 4 Sprigs Cilantro,chopped
INSTRUCTIONS:
- First peel the onions and cut them in cubes.
Marinate the onions with salt,black pepper powder,chili garlic sauce and soy sauce.
Keep it aside for 1 hour. - Now, on a tava / griddle, spread little oil and place all the marinated onion pieces and on medium heat fry it.
Alternatively,put all onion pieces on skewers and keep them on direct flame.
Cook the onions till all the onion petals loosen and they are cooked well.
Mostly keep the onions stirred on the tava till the outer skin is charred or slightly burnt.
Now let it cool. - In a bowl,mix the cooked onion,tomato,salt,sugar,cilantro,grated coconut,green chilies.
Mash well with your hands,so that the charred flavor of onions gets mixed well with all other ingredients.

Here are few Tips:
- To get perfect smoky flavor,try to put the onion pieces on skewers and cook them on direct flame till slightly charred.
- Mixing the mixture well with hands gives nice flavor to the entire dish.
- Increase or reduce the quantity of chili garlic sauce and pepper powder as per choice.
- Serve this with hot Phulka / Roti or even Rice.
