If you have been following my website for sometime then you will know that I have shared a lot of Ice Cream and street food recipes along with Indo-Chinese recipes too.

There is a huge collection of desserts,sweets,ice creams,special festive sweets shared. Here I am updating my most favorite Kulfi recipe,Badam Elaichi Kulfi!
If you have been eating kulfi at Ice cream stores/or if you are in India then the best and most flavorful kulfi you will get are with the small ice cream vendors.They by far serve the most delicious and amazing kulfi at very cheap rates.

In this recipe,I have used Custard Powder to thicken and give a smooth texture to milk,that will make the work easier.
I am sharing a few Tips to make this easier:
- Custard Powder can be of any brand.I used Brown & Polson, Custard Powder
- Make sure that there are no lumps in the milk mixture.
- I used MTR Badam Drink Mix,you can use this or plain Almond Powder.
- Consistency of milk after adding custard powder should be thick ,like thick custard consistency.
Badam Cardamom Kulfi
Ingredients
- 2 Cups Milk,Whole / Full Fat
- 1/4th Cup Almonds,finely chopped
- 2 Tablespoon Vanilla Custard Powder
- 1/2 Tin(200 gm) Amul Mithai Mate (Or Sweetened Condensed Milk)
- 3/4th Cup Milk Cream ( Heavy Whipping Cream or Regular)
- 1 Cup Almond Powder (I used MTR Badam Drink Mix )
- 1 Tablespoon Elaichi Powder (Cardamom Powder)
- Additional:
- 8 Kulfi Mould / Kulfi Maker
- 8 Kulfi Sticks
Instructions
In a shallow pan,add milk and heat it on medium flame.
Make sure it does not burn.
When its hot,add custard powder to it.
Make sure there is no malai/cream formed in milk.
Keep stirring continuously,making sure there are no lumps formed.
Keep stirring till the milk is thickened.
When its getting thick, add chopped almonds and elaichi powder.
The right consistency is the one we get to make fruit custard.
Slightly thicker consistency is right one.
Take it off the gas and let it cool.
To this add the mithai mate or any sweetened condensed milk.
Mix well.
Add almond mix and mix well.
Finally add cream.
Now,pour this mixture in kulfi moulds.
Cover and freeze them for 2 hours.
This time the kulfi is slightly set.
Place kulfi stick in each of the kulfi mould.
See that the kulfi stick stands firm after you place them or else you need to wait for some more time so that kulfi is hardened.
Let it refrigerate for 6-8 hours.
To remove the kulfi from moulds rub the kulfi mould between your palms or dip them in a bowl of water to loosen the kulfi.
Enjoy chilled!

ReplyDeleteyes I have used...the second last picture has it added but i mixed it and then clicked picture :) so may be its not that clear. BUt just follow the recipe it will turn out yummy.
DeleteWhat a wonderful combination of flavors. Making Kulfi is such a nice way to satisfy that ice cream craving without having to use (and clean) an ice cream maker!
