A new post after a long break and here I am sharing one of my favorite cake recipes Pineapple Cake/Cupcakes/Muffins😋
I am posting after a real long break and it was not for fun or amazing family time but because my kids were down with multiple allergies,cold and cough - marathon going on in my house for a couple of days. I am totally exhausted and sleepless,and on top of that missed posting on my blog and Instagram so much.
These days I am hooked onto Instagram too,well frankly I used to share my blog post and then share on my Facebook page but now I post once a week on Instagram. Do check my short Insta-stories 🙂
Coming back to my recipe,I had shared this recipe long time back,now I have updated my post with new pictures,formatted recipe,a lot more write-up than before.
The basic recipe remains the same but I have tested this now as a loaf and cupcakes/muffins too. The end result is soft,spongy and delicious cake,perfect for kids too and they will love this bake for sure.
This recipe works perfectly fine as cupcakes/muffins too.Adding tutti frutti is optional here.I have shared Amazon link where you can find it. If you are in USA then you can easily find these in Indian Grocery Stores.
I love to bake a lot but these days I hardly find time to bake,but my New Year resolution will be to bake and share a lot of recipes.

Pineapple Cake / Cupcakes
Soft and delicious Pineapple cake /Cupcakes are superbly yummy,and one recipe can yield cake and cupcakes too
Ingredients
- 1 Cup Maida / All Purpose Flour
- a Pinch Salt
- 2 Tablespoons Pineapple Essence
- 3 Large(Yolks and whites separated) Eggs,at room temperature
- 3/4th Cup Sugar
- 1/2 Cup Unsalted Butter,at room temperature
- 2 Teaspoon Baking Powder
- 1/4th Cup Milk,at room temperature
- 1/4th Cup Tutti Frutti
Instructions
First,in a mixing bowl,beat butter well till its fluffy.To this add yolks and sugar.
Beat well till sugar gets dissolved well.
I added all egg yolks at the same time.In another mixing bowl,sieve the flour,salt and baking powder twice.In a separate mixing bowl,beat the egg whites,till they are fluffy.Now,add the egg whites to egg yolks mixture.
Slowly add the flour mixture to this egg mixture in batches till well incorporated.Add all the flour and mix well to form a smooth dough.
Add milk and essence to this batter and mix further.Now take 1 tablespoon of this batter and coat the tutty frutty.
Add the tutty frutty to the batter.Preheat the oven at 356F or 180C
Line a loaf pan,with parchment paper or butter paper or grease with butter or line cupcake liners in cupcake/muffin cavity.
Pour the batter in the loaf pan and tap it on kitchen counter to release the air bubbles.Now for the loaf cover the pan with aluminum foil and bake for 20minutes.
Then remove the aluminum foil and bake it at 320F for 30 minutes or till the knife comes out clean.
Let the cake cool before take it out of the pan.For cupcakes /muffins, bake them for 12mins or till cupcakes are done.
When cooled,remove it from the pan and cut in desired pieces.
Enjoy this yummy cake /cupcakes with tea!

- I have realized that beating egg yolks and egg whites for certain cakes works wonders. So do not skip this step.
- Try adding chunks of pineapple in this recipe,it will be better in taste too.
- If you want to still give a better and authentic pineapple look then add some light green color to it.
- Adding butter can be skipped.You can add ghee instead.
- If you want to avoid butter or ghee altogether then try skipping ghee too instead add little pineapple juice and increase the milk quantity but then the baking time will vary.
- Adjust the oven temperatures as per individual oven settings.
- If you are using salted butter then skip adding salt.

ReplyDeleteIn Europe you can buy those tutti frutti separately. So you have orange, lemon, cherry, annanas,... these are the main ones which you get. ?In fact the orange ones have a separate name in Austria as they are very widely used, we call them aranzini.
